Creamy Corn Casserole Recipe

Ingredients

  • 3 cups corn kernels (fresh, frozen, or canned and drained)
  • 1 cup (240ml) heavy cream
  • 1/2 cup (115g) sour cream
  • 2 tablespoons unsalted butter, melted
  • 1 cup (100g) shredded cheddar cheese
  • 1/4 cup (30g) grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon all-purpose flour
  • Optional: 1/4 teaspoon smoked paprika or cayenne pepper for a bit of heat

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Mixture:
    • In a large mixing bowl, combine the corn kernels, heavy cream, sour cream, and melted butter. Stir until well mixed.
    • Add the garlic powder, onion powder, salt, black pepper, and flour. Mix until the flour is fully incorporated.
    • Stir in half of the shredded cheddar cheese and the Parmesan cheese.
  3. Assemble the Casserole:
    • Pour the corn mixture into a greased 9×9-inch baking dish or a similar-sized casserole dish.
    • Sprinkle the remaining cheddar cheese evenly over the top.
  4. Bake:
    • Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbly around the edges.
  5. Serve:
    • Allow the casserole to cool for a few minutes before serving. It can be served as a side dish with your favorite main courses.

Tips

  • Corn: If using frozen corn, make sure to thaw and drain it well. If using canned corn, drain and rinse before using.
  • Cheese: Feel free to experiment with different types of cheese for added flavor, such as Monterey Jack or Pepper Jack for a spicy kick.
  • Add-ins: For extra flavor, consider adding chopped green onions, bell peppers, or cooked bacon bits.
