Creamy Lemon Squares Recipe

Ingredients:

  • 1 can (14 ounces) sweetened condensed milk
  • 2 egg yolks
  • 1/2 cup fresh lemon juice
  • For the base:
  • 1.5 cups crushed graham crackers
  • 1/4 cup sugar
  • 4 tablespoons butter, melted and cooled

1. Preheat the oven to 175°C (350°F). Grease a 20 x 20 cm baking tin with butter or line it with baking paper for easier removal.
2.In a bowl, combine melted butter, graham cracker crumbs, and sugar for the crust. Mix well until the mixture resembles wet sand.
3. Press the crust mixture firmly into the bottom of the prepared baking pan to form an even layer. Bake for about 10 minutes or until lightly golden brown.Let cool for 30 minutes.
4. In another bowl, mix the egg yolk and condensed milk well.
5. Gradually add the fresh lemon juice to the egg yolk mixture and stir until a smooth, creamy mixture is formed.6. Pour the lemon filling over the cooled base in the baking pan and distribute it evenly.
7. Bake for another 15 minutes until the dough is firm. Remove and chill until firm, at least 1 hour.Once cooled, carefully remove the lemon squares from the pan with baking paper (if using) and cut into squares.
