Creamy Spinach Casserole
Ingredients:

For the Casserole:
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup heavy cream
- 1/4 teaspoon nutmeg
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 (10-ounce) packages frozen chopped spinach, thawed and drained
- 1/2 cup sour cream
For the Topping:
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs
- 2 tablespoons melted butter
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Prepare the Sauce:
- In a large saucepan over medium heat, melt the butter.
- Add the onion and garlic, and sauté until the onion is translucent.
- Stir in the flour and cook for about 1 minute, until the flour is lightly golden.
- Gradually whisk in the milk and cream, stirring constantly until the mixture is smooth and begins to thicken.
- Add the nutmeg, salt, and pepper.
- Stir in the mozzarella and Parmesan cheeses until melted and the sauce is creamy.
- Mix the Casserole:
- In a large bowl, combine the spinach and sour cream.
- Pour the cheese sauce over the spinach mixture and stir until well combined.
- Transfer the mixture to the prepared baking dish.
- Prepare the Topping:
- In a small bowl, mix the cheddar cheese, breadcrumbs, and melted butter.
- Sprinkle the topping evenly over the casserole.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
- Serve:
- Let the casserole cool for a few minutes before serving.
