Creamy Spinach Casserole

Ingredients:

For the Casserole:

  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 1/4 teaspoon nutmeg
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 (10-ounce) packages frozen chopped spinach, thawed and drained
  • 1/2 cup sour cream

For the Topping:

  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 2 tablespoons melted butter

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Prepare the Sauce:
    • In a large saucepan over medium heat, melt the butter.
    • Add the onion and garlic, and sauté until the onion is translucent.
    • Stir in the flour and cook for about 1 minute, until the flour is lightly golden.
    • Gradually whisk in the milk and cream, stirring constantly until the mixture is smooth and begins to thicken.
    • Add the nutmeg, salt, and pepper.
    • Stir in the mozzarella and Parmesan cheeses until melted and the sauce is creamy.
  3. Mix the Casserole:
    • In a large bowl, combine the spinach and sour cream.
    • Pour the cheese sauce over the spinach mixture and stir until well combined.
    • Transfer the mixture to the prepared baking dish.
  4. Prepare the Topping:
    • In a small bowl, mix the cheddar cheese, breadcrumbs, and melted butter.
    • Sprinkle the topping evenly over the casserole.
  5. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
  6. Serve:
    • Let the casserole cool for a few minutes before serving.
