Creamy Tomato and Spinach Pasta

Ingredients:
- 12 oz rigatoni or your favorite pasta
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup heavy cream
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
- Cook Pasta:
- Cook the pasta according to the package instructions. Drain and set aside.
- Prepare Sauce:
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add Tomatoes:
- Add the diced tomatoes (with their juices) and tomato sauce to the skillet. Stir in the dried oregano, dried basil, and red pepper flakes if using. Simmer for about 10 minutes to let the flavors meld.
- Make it Creamy:
- Stir in the heavy cream and let the sauce simmer for another 5 minutes until it thickens slightly.
- Add Spinach:
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
- Combine:
- Add the cooked pasta to the skillet and toss to coat evenly with the sauce.
- Serve:
- Serve the creamy tomato and spinach pasta topped with grated Parmesan cheese.
