This Crinkle Tortilla Casserole is a cheesy, comforting, and crunchy baked dish layered with tortillas, seasoned meat, beans, and gooey cheese. It’s a perfect weeknight dinner that’s fast to assemble and sure to please the whole family.
Ingredients

1 lb (450g) ground beef or turkey

1 small onion, finely diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (10 oz) diced tomatoes with green chilies (like Rotel)

1 can (15 oz) black beans, drained and rinsed

1 cup frozen corn (optional)

10 small flour or corn tortillas, cut or crinkled

2 cups shredded Mexican blend cheese

1/2 cup sour cream or Greek yogurt

Olive oil or cooking spray (for greasing)

Chopped cilantro, for garnish (optional)
Instructions

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

In a skillet over medium heat, cook ground meat until browned. Drain excess fat.

Add onion and garlic; sauté for 2-3 minutes until fragrant.

Stir in taco seasoning, diced tomatoes, black beans, and corn. Simmer for 5 minutes.

In the baking dish, place a layer of crinkled tortillas on the bottom.

Spread half of the meat mixture over tortillas, then sprinkle with cheese and add dollops of sour cream.

Repeat layers: tortillas, meat, cheese, sour cream.

Finish with a top layer of cheese. Cover with foil.

Bake for 20 minutes covered, then remove foil and bake another 10-15 minutes until bubbly and golden.

Let sit for 5-10 minutes before slicing. Garnish with cilantro.
