These crispy Cheesy Cauliflower Fritters are the ultimate low-carb comfort food! They’re golden on the outside, cheesy and tender on the inside, and packed with flavor. Ideal as a quick snack, appetizer, or side dish, they’re also keto and gluten-free friendly. Ready in under 30 minutes!


Ingredients

  • 1 small head of cauliflower, chopped into florets

  • 2 large eggs

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup grated parmesan cheese

  • 1/3 cup almond flour (or all-purpose flour)

  • 2 tablespoons chopped parsley or green onions

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Olive oil or butter for frying


Instructions

  1. Prep Cauliflower
    Steam or boil the cauliflower until fork-tender (about 8–10 minutes). Drain well and mash it with a fork or pulse in a food processor.

  2. Mix Batter
    In a large bowl, combine the mashed cauliflower with eggs, both cheeses, flour, herbs, garlic powder, salt, and pepper. Mix until fully combined.

  3. Shape Fritters
    Scoop a spoonful of mixture and shape into a small patty or fritter.

  4. Fry Fritters
    Heat a non-stick skillet over medium heat and add a bit of oil. Fry the fritters for 3–4 minutes per side until golden and crispy.

  5. Drain & Serve
    Remove and drain on paper towels. Serve hot with your favorite dip!

Notes

  • Make it spicier: Add chopped jalapeños or red pepper flakes.

  • Baking option: Bake at 400°F (200°C) for 15–18 minutes, flipping halfway.

  • Reheat leftovers in a skillet or air fryer for crispiness.

  • Dip suggestions: Ranch, sour cream, sriracha mayo, or tzatziki.
