These crispy Cheesy Cauliflower Fritters are the ultimate low-carb comfort food! They’re golden on the outside, cheesy and tender on the inside, and packed with flavor. Ideal as a quick snack, appetizer, or side dish, they’re also keto and gluten-free friendly. Ready in under 30 minutes!
Ingredients

1 small head of cauliflower, chopped into florets

2 large eggs

1/2 cup shredded cheddar cheese

1/4 cup grated parmesan cheese

1/3 cup almond flour (or all-purpose flour)

2 tablespoons chopped parsley or green onions

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

Olive oil or butter for frying
Instructions

Prep Cauliflower
Steam or boil the cauliflower until fork-tender (about 8–10 minutes). Drain well and mash it with a fork or pulse in a food processor. -
Mix Batter
In a large bowl, combine the mashed cauliflower with eggs, both cheeses, flour, herbs, garlic powder, salt, and pepper. Mix until fully combined. -
Shape Fritters
Scoop a spoonful of mixture and shape into a small patty or fritter. -
Fry Fritters
Heat a non-stick skillet over medium heat and add a bit of oil. Fry the fritters for 3–4 minutes per side until golden and crispy. -
Drain & Serve
Remove and drain on paper towels. Serve hot with your favorite dip!
