Golden, crispy potato fritters made with simple ingredients and served with a refreshing, herby sour cream dip. Perfect for parties, brunches, or a cozy snack at home!
Ingredients
For the Fritters:

4 large russet potatoes, peeled and grated

1 small onion, grated

2 large eggs

1/4 cup all-purpose flour

1 tsp salt

1/2 tsp black pepper

Vegetable oil for frying
For the Herbed Dip:

1 cup sour cream

2 tbsp fresh dill, chopped

1 tbsp parsley, chopped

1 garlic clove, minced
-
1/2 tsp lemon juice

Salt and pepper to taste

(Optional) Smoked paprika, for garnish
Instructions

Grate & Prep
Grate potatoes and onion. Squeeze out all moisture using a towel or cheesecloth. -
Make the Batter
Combine grated mix with eggs, flour, salt, and pepper. Mix well until sticky and combined. -
Fry the Fritters
Heat oil in a skillet over medium heat. Add spoonfuls of batter and flatten gently. Fry for 3–4 minutes per side until golden brown. Transfer to paper towels. -
Make the Dip
In a small bowl, combine sour cream, dill, parsley, garlic, lemon juice, salt, and pepper. Mix and chill for 10 minutes. -
Serve
Arrange hot fritters on a plate with the dip in the center. Sprinkle paprika on top of the dip if desired.
Notes

For extra crispiness, double squeeze the potatoes to remove moisture.

You can add grated zucchini or carrots for variation.

Air fryer option: Cook at 375°F for 10–12 minutes, flipping halfway.
