Crispy Potato Patties

Ingredients:

  • 4 large potatoes, peeled and boiled
  • 1/2 cup grated cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1/2 cup breadcrumbs
  • Oil for frying

Instructions:

  1. Mash the Potatoes: In a large bowl, mash the boiled potatoes until smooth.
  2. Mix the Ingredients: Add the grated cheese, chopped onions, parsley, garlic powder, onion powder, salt, and black pepper to the mashed potatoes. Mix well to combine.
  3. Form the Patties: Take a small portion of the potato mixture and form it into a patty. Repeat with the remaining mixture.
  4. Prepare for Frying:
    • Beat the egg in a shallow dish.
    • Place the flour in another shallow dish.
    • Place the breadcrumbs in a third shallow dish.
  5. Coat the Patties: Dip each patty into the flour, then the beaten egg, and finally coat it with breadcrumbs. Repeat with all the patties.
  6. Heat the Oil: In a large skillet, heat oil over medium heat.
  7. Fry the Patties: Fry the patties in batches until golden brown and crispy on both sides, about 3-4 minutes per side. Drain on paper towels to remove excess oil.
  8. Serve: Serve the crispy potato patties hot, garnished with additional chopped parsley if desired.
