Ingredients for Crockpot Pork Roast

For the Pork Roast:

  • 3 to 4 lb pork shoulder (or pork loin)

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme (or rosemary)

  • 1 tablespoon Worcestershire sauce

  • 1 cup beef or chicken broth

  • 1 tablespoon soy sauce (for extra depth of flavor)

  • 3 cloves garlic, minced

  • 1 onion, sliced

  • 3 large carrots, chopped

  • 3 medium potatoes, cut into chunks (optional)


How to Make Crockpot Pork Roast

Step 1: Prepare the Pork Roast

Pat the pork roast dry with paper towels. Rub it all over with salt, pepper, garlic powder, onion powder, paprika, and thyme.

Step 2: Sear the Pork (Optional, But Recommended)

In a large skillet, heat olive oil over medium-high heat. Sear the pork roast on all sides for 2-3 minutes per side until golden brown. This locks in flavor and creates a beautiful crust.

Step 3: Prepare the Crockpot

Place the sliced onions, garlic, carrots, and potatoes (if using) at the bottom of the slow cooker. This creates a flavorful base.

Step 4: Add the Pork & Liquids

Place the seared pork roast on top of the vegetables. Pour in the beef broth, Worcestershire sauce, and soy sauce. Cover and set the slow cooker to LOW for 8-10 hours or HIGH for 4-5 hours.

Step 5: Check for Doneness

The pork is done when it reaches an internal temperature of 190-200°F (88-93°C) for pull-apart tenderness. Use a fork to test if it easily shreds.

Step 6: Serve & Enjoy

Remove the pork from the crockpot and let it rest for 10 minutes. Slice or shred it and serve with the cooked vegetables and a drizzle of the flavorful broth.

  • Choose the Right Cut: Pork shoulder (or pork butt) is best for slow cooking as it becomes incredibly tender.

  • Searing is Key: While optional, browning the meat before slow cooking enhances the flavor.

  • Add a Gravy: For a rich gravy, mix 2 tablespoons of cornstarch with ¼ cup water and stir it into the crockpot juices during the last 30 minutes of cooking.
