CUCUMBER TOMATO SALAD

This quick and easy tomato and cucumber salad is packed with flavor thanks to ripe tomatoes, crunchy cucumbers, fresh herbs, and a savory four-ingredient vinaigrette dressing. I love serving this side dish with grilled chicken or grilled salmon. This summer salad also makes a great vegetarian lunch or light dinner for hot days when it’s not convenient to turn on the stove.

HOW TO MAKE CUCUMBER TOMATO SALAD

In a jar with a tight-fitting lid or with a small bowl and a whisk, add olive oil, red wine vinegar, honey and Dijon mustard. Shake vigorously to mix.Place cucumbers, tomatoes and red onions in a large bowl. Sprinkle with fresh herbs and pour the vinaigrette over the salad. Mix and season with kosher salt and freshly ground black pepper.

HELPFUL RECIPE TIPS

Use English cucumbers for tender skins that don’t require peeling. If using regular cucumbers, peel them before slicing to remove the thick skin.Use fresh herbs like dill, basil, cilantro, thyme or dried oregano.
You can mix the vinaigrette up to several hours in advance. Remember to shake vigorously before drizzling over the salad.
Other vinegars to use include apple cider vinegar, white wine vinegar or champagne vinegar.
Fresh tomatoes such as grape tomatoes, cherry tomatoes, Campari tomatoes, heirloom tomatoes or sun-ripened tomatoes work well in this recipe.Try adding fresh mozzarella, avocado, feta cheese, toast cubes, homemade croutons, capers, or blue cheese.
Store leftovers in an airtight container in the refrigerator for up to 2 days. Mix again before serving.
