These golden, crispy deep fried marshmallows are a melt-in-your-mouth carnival treat made right at home! Coated in a simple pancake batter and quickly fried, they’re gooey on the inside and perfectly crisp on the outside—ideal for parties, dessert tables, or fun snack nights.


Ingredients

  • 20 large marshmallows

  • 1⅓ cups buttermilk pancake mix

  • ⅔ cup whole milk

  • 1 large egg

  • ¼ tsp vanilla extract

  • Canola oil for frying

  • Optional toppings: powdered sugar, chocolate sauce, caramel drizzle, crushed graham crackers


Instructions

  • Heat the oil: In a deep pot or fryer, heat canola oil to 350°F (175°C).

  • Make the batter: In a bowl, whisk together pancake mix, milk, egg, and vanilla until smooth.

  • Dip and fry: Dip each marshmallow into the batter to coat completely. Carefully drop into the hot oil.

  • Fry until golden: Cook for 30–45 seconds, turning as needed, until puffed and golden.

  • Drain & serve: Remove with a slotted spoon and drain on paper towels. Serve warm with your favorite toppings.

Notes

  • Chill marshmallows in the freezer for 10 minutes before frying to keep them from melting too quickly.

  • Use mini marshmallows for bite-size party treats (adjust frying time accordingly).

  • Don’t overcrowd the oil—fry in small batches to keep the temperature steady.

  • These are best eaten fresh but can be reheated briefly in an air fryer for a crispy exterior.
