These golden, crispy deep fried marshmallows are a melt-in-your-mouth carnival treat made right at home! Coated in a simple pancake batter and quickly fried, they’re gooey on the inside and perfectly crisp on the outside—ideal for parties, dessert tables, or fun snack nights.
Ingredients

20 large marshmallows

1⅓ cups buttermilk pancake mix

⅔ cup whole milk

¼ tsp vanilla extract

Canola oil for frying

Instructions

Heat the oil: In a deep pot or fryer, heat canola oil to 350°F (175°C).

Make the batter: In a bowl, whisk together pancake mix, milk, egg, and vanilla until smooth.

Dip and fry: Dip each marshmallow into the batter to coat completely. Carefully drop into the hot oil.

Fry until golden: Cook for 30–45 seconds, turning as needed, until puffed and golden.

Drain & serve: Remove with a slotted spoon and drain on paper towels. Serve warm with your favorite toppings.
