Vegetable fried rice is a versatile and quick dish that can be enjoyed as a main course or a side dish. Ingredients:

  • 3 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots, thawed
  • 1/2 cup chopped green onions
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Ingredients:
    • Make sure all ingredients are prepped and ready before you start cooking, as the process goes quickly once you begin.
  2. Cook the Eggs:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
  3. Stir-Fry the Vegetables:
    • In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and cook for about 30 seconds until fragrant. Then, add the peas, carrots, and chopped green onions. Stir-fry for 3-4 minutes until the vegetables are tender.

  5. Season the Rice:
    • Add the scrambled eggs back into the skillet. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir everything together until well combined. Cook for an additional 1-2 minutes, ensuring the rice is evenly coated with the sauces.
  6. Season and Serve:
    • Season with salt and pepper to taste. Serve hot as a main dish or a side dish.

Tips for Perfect Fried Rice:

  • Day-Old Rice: Using day-old rice prevents the fried rice from becoming mushy. Freshly cooked rice can be too moist and sticky.
