Ingredients

  • 16 Rhodes rolls unbaked frozen roll dough
  • 1 pound lean ground beef
  • 2 tablespoons butter
  • 1 small yellow onion, finely chopped
  • 2 cups finely chopped cabbage
  • Salt and pepper to taste
  • 1-2 tablespoons all-purpose flour
  • 1 egg
  • 1 tablespoons of milk

Place the frozen muffins several centimeters apart on baking sheets lined with baking paper. Cover with cling film and let rise at room temperature until doubled in size. This may take 3-5 hours. So plan accordingly.
Fry the minced meat in a large pan over medium heat. When the meat is half browned, add butter, onions and cabbage.Then cook until the meat is browned and the onions and cabbage are soft. Let it cool for a few minutes.
Preheat oven to 350 degrees.
On a lightly floured work surface, use your fingers to shape each ball of dough into a round flatbread that resembles miniature pizza dough. Place a heaping tablespoon of burger mixture in the center of the dough.Use your fingers to lift the edges of the dough and pinch to seal. Gently roll between your hands to work the seams. Place it back on the parchment paper, seam side down. Continue working until all dough balls are filled. Cover with plastic wrap for 30 minutes.Whisk egg and milk together. Gently and lightly brush the dough with the beaten egg. Bake for 18-20 minutes or until golden brown, rotating the baking sheet halfway through.

Notes

Time is important in this recipe. So plan ahead knowing that the dough will take several hours to rise. On the other hand, if it rises too quickly and you’re not ready yet, refrigerate it for up to an hour.Rhodes brand ready-made frozen muffin batter is available in the freezer section of most local grocery stores. I’ve always found it to be a good product, but I’m sure there are other good brands you can use. Crescent dough is a good second option.
Finely chop the onions and cabbage so that the mixture can be easily incorporated into the dough.
For a change, add chopped cooked bacon, browned sausage, or sautéed mushrooms.If the dough is sticky, lightly flour the work surface.
Don’t leave out the beaten egg. It really gives them a bakery fresh look. If you want, you can also brush them with melted butter.
A true Nebraska runza contains no cheese; However, some shredded cheddar cheese, Swiss cheese, mozzarella cheese, or Monterey Jack cheese is delicious.Spoon it directly onto the meat mixture before pressing the dough together.
