Ingredients

  • 2 large eggplants
  • Salt

  • 2 cups of shredded mozzarella cheese
  • 1 cup of grated Parmesan cheese

Instructions

  1. Prepare the Eggplant: Slice the eggplants into 1/4-inch thick rounds. Sprinkle salt on each slice and place them in a colander. Let them sit for about 30 minutes to draw out excess moisture. Rinse and pat them dry.
  2. Bread the Eggplant: Set up a dredging station with flour in one bowl, beaten eggs in the second, and breadcrumbs in the third. Dredge each eggplant slice in flour, then dip it into the egg, and finally coat it with breadcrumbs.
  3. Fry the Eggplant: In a large skillet, heat olive oil over medium-high heat. Fry the eggplant slices until golden brown on both sides. Remove and drain on paper towels to remove excess oil.
  4. Assemble the Dish: Preheat the oven to 375°F (190°C). In a baking dish, spread a layer of tomato sauce. Arrange a layer of fried eggplant slices on top, then sprinkle with mozzarella and Parmesan cheese. Repeat the layers until all the ingredients are used, ending with a layer of cheese on top.
  5. Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly. Let it cool for a few minutes before serving.
