INGREDIENTS
- four pork tenderloin steaks (about 6 oz. each)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup pork broth
- 1/4 cup brandy or cognac
- 1/4 cup heavy cream
- 2 tablespoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1 tablespoon sparkling parsley, chopped
- Salt and black pepper to style

INSTRUCTIONS
Prepare the Steaks:
Season the pork tenderloin steaks with salt and black pepper on each sides.
In a giant skillet, warmness the olive oil over medium-high heat.
Add the steaks to the skillet and cook dinner for about 3-4 minutes per facet for medium-rare, or till favored doneness. Remove the steaks from the skillet and set apart to rest.
Make the Sauce:
