Fluffy Pancakes with Whipped Cream

Ingredients

For the Pancakes:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

For the Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Optional Toppings:

  • Powdered sugar for dusting
  • Maple syrup
  • Fresh berries

Instructions

  1. Make the Pancake Batter:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly lumpy.
  2. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
    • Pour about 1/4 cup of batter onto the skillet for each pancake.
    • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
    • Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
    • Transfer the pancakes to a plate and keep them warm. Repeat with the remaining batter.
  3. Make the Whipped Cream:
    • In a chilled bowl, beat the heavy whipping cream with an electric mixer until soft peaks form.
    • Add the powdered sugar and vanilla extract, and continue to beat until stiff peaks form.
  4. Assemble and Serve:
    • Stack the pancakes on a serving plate.
    • Top with dollops of whipped cream and a dusting of powdered sugar.
    • Serve with maple syrup and fresh berries if desired.
