FRESH BLACK BEAN AND CORN SALAD

INGREDIENTS

  • 2 ears of corn, peeled and peeled
  • 1 can black beans (15.25 ounces), drained and rinsed
  • 1/2 cup finely chopped red onion
  • 1 1/4 cups heirloom tomatoes, finely chopped
  • 1/2 jalapeno peppers, finely chopped chopped chopped
  • 1 chopped avocado
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cumin
  • 1 garlic clove, chopped
  • 1/4 cup fresh coriander, chopped
  • Salt and freshly ground black pepper to taste

Put corn in boiling water, bring it with you. Bring to a boil. Cover and remove from heat. Let it rest for 7 to 10 minutes.Allow to cool and remove the seeds from the cob.
In a large bowl, combine corn, black beans, red onion, tomatoes, jalapeño and avocado.
In a small bowl, stir together olive oil, lime juice, apple cider vinegar, cumin, garlic and coriander. Pour the dressing over the vegetables and mix. Season with kosher salt and freshly ground black pepper.Let cool for 30 minutes.

NOTES

When it boils, put corn in boiling water. Bring the water back to a boil and turn off the heat. Cover the pot and let the corn rest for about seven minutes.
When grilling, place the corn directly over the hot fire and close the lid.Turn every five minutes until lightly charred and cooked through, about 10 to 15 minutes.
If using in the microwave, place the corn in the microwave with the husk on. Let cook for 2 minutes. Let the corn rest for five minutes before handling.
When cooking in the pan, cut the kernels from the cob.Add 1 tablespoon oil to a large skillet over medium-high heat. Add corn and cook for 12 to 15 minutes, stirring frequently.
Use seasonal tomatoes, which are sweeter. When I made this black bean and corn salad, the sweetest tomatoes I got were grape tomatoes.
Choose a nice ripe avocado.Remove the steam or lid from the top of the avocado. If it comes off easily and you find a green light underneath, then you have a nice, ripe avocado ready to eat. If the bottom is brown, your avocado is probably overripe and you will find brown spots on your avocado.
