Ingredients

For the Dough:

  • 2 cups all-purpose flour

  • 1/2 tsp salt

  • 2 tsp sugar

Step 1: Prepare the Dough

  1. In a large bowl, whisk together the flour, salt, and sugar.

  2. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.

  3. Stir in the buttermilk just until the dough comes together.

  4. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Step 2: Make the Apple Filling

  1. In a skillet over medium heat, melt butter and add the diced apples, sugar, cinnamon, nutmeg, and lemon juice.

  2. Cook for 5–7 minutes, stirring often, until apples soften slightly.

  3. Stir in the cornstarch mixture and cook another 1–2 minutes until thickened.

  4. Remove from heat and let cool completely.

Step 3: Assemble the Pies

  1. Roll out the dough on a lightly floured surface to about 1/8-inch thickness.

  2. Cut into circles (about 5 inches wide).

  3. Place a spoonful of cooled apple filling in the center of each circle.

  4. Fold over into a half-moon shape and crimp the edges with a fork to seal.

  5. Chill the assembled pies for 10 minutes to help them hold their shape.

Step 4: Fry the Pies

  • Heat oil in a deep pan to 350°F (175°C).
