Garlic Butter Roasted Artichokes

Ingredients

  • 4 large artichokes

  • 1/4 cup unsalted butter, melted

  • 4 cloves garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Trim and prepare the artichokes: Cut off the tops and stems, then slice each artichoke in half. Remove the fuzzy choke in the center with a spoon.

  3. Steam (optional but recommended): For tender results, steam the halved artichokes for about 10–15 minutes before roasting.

  4. Arrange the artichokes cut-side up on a baking sheet lined with foil or parchment paper.

  5. Mix the butter and garlic together in a small bowl.

  6. Drizzle or brush the garlic butter generously over each artichoke half, letting it seep into the layers.

  7. Season with salt, pepper, and optional fresh herbs like parsley or thyme.

  8. Roast for 20–25 minutes or until the edges are golden and slightly crispy.

  9. Serve warm, and enjoy as a side dish or light appetizer.
