Garlic Butter Roasted Potatoes

Ingredients:

  • 2 pounds baby potatoes, halved or quartered
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes: In a large bowl, combine the melted butter, minced garlic, olive oil, dried thyme, dried rosemary, salt, and black pepper. Add the halved or quartered potatoes and toss until they are evenly coated with the mixture.
  3. Arrange on Baking Sheet: Spread the coated potatoes in a single layer on a large baking sheet.
  4. Roast the Potatoes: Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, tossing halfway through the cooking time to ensure even roasting.
  5. Garnish and Serve: Remove the potatoes from the oven and transfer them to a serving dish. Garnish with chopped fresh parsley and serve immediately.
