Garlic Herb Roasted Potatoes

Ingredients:

  • 1.5 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

Garlic Herb Roasted Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes: Wash and halve the baby potatoes and place them in a large bowl.
  3. Season: Add olive oil, minced garlic, rosemary, thyme, oregano, salt, and pepper to the potatoes. Toss until evenly coated.
  4. Roast: Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden and crisp, stirring halfway through.
  5. Garnish: Once done, sprinkle chopped fresh parsley over the potatoes for added flavor and color.
  6. Serve: Enjoy hot as a side dish or a standalone snack!
