German Chocolate Cake Bars

Ingredients

For the Cake:

  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) buttermilk
  • 1/2 cup (120ml) vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Coconut-Pecan Frosting:

  • 1/2 cup (120ml) evaporated milk
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (56g) unsalted butter
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup (80g) sweetened shredded coconut
  • 1/2 cup (60g) chopped pecans

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch (20×20 cm) baking pan with parchment paper.
  2. Make the Cake Batter:
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
    • In another bowl, mix together the buttermilk, vegetable oil, egg, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined.
  3. Bake the Cake:
    • Pour the batter into the prepared baking pan and spread it evenly.
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool completely in the pan on a wire rack.
  4. Prepare the Coconut-Pecan Frosting:
    • In a medium saucepan, combine the evaporated milk, sugar, butter, and egg yolk. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10-12 minutes).
    • Remove from heat and stir in the vanilla extract, shredded coconut, and chopped pecans.
    • Allow the frosting to cool slightly.
  5. Assemble the Bars:
    • Once the cake has cooled, spread the coconut-pecan frosting evenly over the top.
    • Cut into squares and serve.

Tips

  • Cooling: Make sure the cake is completely cool before adding the frosting to prevent it from melting.
  • Storage: Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for longer storage.
