German Chocolate Cake Bars
Ingredients

For the Cake:
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (45g) unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (120ml) buttermilk
- 1/2 cup (120ml) vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
For the Coconut-Pecan Frosting:
- 1/2 cup (120ml) evaporated milk
- 1/2 cup (100g) granulated sugar
- 1/4 cup (56g) unsalted butter
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 cup (80g) sweetened shredded coconut
- 1/2 cup (60g) chopped pecans
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch (20×20 cm) baking pan with parchment paper.
- Make the Cake Batter:
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix together the buttermilk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Bake the Cake:
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- Prepare the Coconut-Pecan Frosting:
- In a medium saucepan, combine the evaporated milk, sugar, butter, and egg yolk. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10-12 minutes).
- Remove from heat and stir in the vanilla extract, shredded coconut, and chopped pecans.
- Allow the frosting to cool slightly.
- Assemble the Bars:
- Once the cake has cooled, spread the coconut-pecan frosting evenly over the top.
- Cut into squares and serve.
Tips
- Cooling: Make sure the cake is completely cool before adding the frosting to prevent it from melting.
- Storage: Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for longer storage.
