GLAZED CARROTS
Ingredients:
- 1 1/2 pounds carrots, peeled and cut into 1-1 1/2 inch pieces
- 1/4 cup butter
- 1/3 cup packed light brown sugar
- 1/2 cup water
- kosher salt flavor
- freshly ground black Pepper to taste
- 1/4 teaspoon ground cinnamon optional
- 1 pinch ground cayenne pepper optional
- chopped fresh parsley

Place carrots, butter, brown sugar and water in a large pot. Cover and cook over medium-low heat for about 10 minutes, or until the carrots begin to soften.
Remove the lid and cook over medium heat for 8-10 minutes or until the glaze thickens.
Season with salt and pepper and add a little cinnamon and ground cayenne pepper if desired. Sprinkle with freshly chopped parsley.
Notes
Peel carrots for aesthetic reasons. They will appreciate you doing this. The bright orange color is beautiful.
Cut the carrots into 2.5cm wedges. Halve the thick ends.The small amount of cayenne pepper in this recipe makes it neither hot nor spicy. Adds a little more flavor dimension.
This recipe can be made in advance and stored in an airtight container in the refrigerator. To serve, heat the glazed carrots in a skillet over medium-low heat or in the microwave.
