If you’re a chocolate lover, prepare to meet your new favorite dessert — this Gooey Brownie Pie is a fudgy, molten masterpiece that combines the best of both worlds: the crisp edges of a brownie and the rich, soft center of a warm pie. It’s indulgent, easy to make, and perfect for holidays, birthdays, or a cozy night in.

What Is a Brownie Pie?

Brownie Pie is exactly what it sounds like — a rich, chocolate brownie batter baked into a buttery pie crust. The result? A dessert that’s slightly crisp on top, soft and gooey in the middle, and incredibly satisfying with a scoop of vanilla ice cream.

Think of it as a brownie that never dries out — just ooey, gooey, chocolatey goodness in every bite.

Ingredients

Here’s what you’ll need for one 9-inch Gooey Brownie Pie:

For the Pie:

  • 1 unbaked 9-inch pie crust (store-bought or homemade)

  • 1/2 cup (1 stick) unsalted butter

  • 1 cup granulated sugar

  • 2 large eggs

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup all-purpose flour

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1/2 cup chocolate chips or chunks (optional, but highly recommended)

‍ Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C).

  • Place your pie crust into a 9-inch pie dish and set aside.

Step 2: Make the Brownie Filling

  1. In a medium saucepan, melt the butter over low heat. Remove from heat and let cool slightly.

  2. Stir in the sugar, followed by the eggs, one at a time.

  3. Add the vanilla extract, then stir in the cocoa powder, flour, and salt until smooth.

  4. Fold in the chocolate chips for an extra gooey, melty center.

Step 3: Bake

  • Pour the brownie mixture into the prepared pie crust.

  • Bake for 35–40 minutes, or until the top is set but the center still has a soft wobble.

  • A toothpick inserted in the center should come out with moist crumbs, not completely clean.

Step 4: Cool Slightly & Serve

  • Let the pie cool for at least 15–20 minutes before slicing. The center will continue to set as it cools.

  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.

Tips for Extra Gooey Goodness

  • For a lava-cake style pie, underbake by a couple of minutes and serve immediately.

  • Add a tablespoon of espresso powder to deepen the chocolate flavor.

  • Mix in chopped nuts, caramel swirls, or even peanut butter chips for fun variations.

Storage & Reheating

  • Store leftovers at room temperature (covered) for up to 2 days, or refrigerate for up to 5 days.

  • Reheat slices in the microwave for 10–15 seconds to restore the gooey texture.

️ Perfect For:
