  • lbs boneless, skinless chicken breasts or thighs

  • Salt and black pepper to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt (full-fat preferred)

  • ½ medium cucumber, grated and squeezed dry

  • 1 tbsp olive oil

  • 1 clove garlic, finely minced

  • 1 tbsp fresh lemon juice

  • 1 tbsp chopped fresh dill (or mint)

  • Salt and pepper to taste

For Assembly:

  • 46 warm pita breads or flatbreads

  • Sliced red onion

  • Diced tomatoes

  • Fresh spinach or romaine

  • Crumbled feta cheese (optional)


Instructions

. Marinate the Chicken:

  • In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.

  • Add chicken, toss to coat, cover, and refrigerate for at least 30 minutes (or up to 12 hours).

2. Grill the Chicken:

  • Preheat a grill or skillet over medium-high heat.

  • Grill chicken for 5–6 minutes per side, or until fully cooked and nicely charred.

  • Let rest for 5 minutes, then slice thinly.

3. Make the Tzatziki Sauce:

  • In a bowl, combine yogurt, grated cucumber, garlic, lemon juice, olive oil, and dill.

  • Season with salt and pepper to taste.

  • Chill until ready to serve.

4. Assemble the Gyros:

  • Warm your pitas in a dry skillet or microwave.

  • Layer spinach or romaine, grilled chicken, tomatoes, and onions.

  • Top with a generous spoonful of tzatziki and crumbled feta if desired.
