Hearty Cabbage and Ground Beef Soup Recipe
Ingredients:
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 small head of cabbage, chopped
- 3 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: 1 teaspoon red pepper flakes for heat
Instructions:
- Prepare Vegetables: Wash and chop the cabbage, carrots, celery, and bell pepper. Set aside.
- Cook Ground Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
- Add Aromatics: Add the chopped onion and minced garlic to the pot with the ground beef. Sauté until the onion is translucent, about 5 minutes.
- Combine Ingredients: Add the chopped cabbage, carrots, celery, and bell pepper to the pot. Stir in the diced tomatoes (with their juice), beef broth, dried thyme, dried basil, paprika, salt, and pepper. If you like a bit of heat, add the red pepper flakes.
- Simmer Soup: Bring the soup to a boil, then reduce the heat and let it simmer for about 30-40 minutes, or until the vegetables are tender.
- Adjust Seasoning: Taste the soup and adjust the seasoning if needed. Add more salt, pepper, or herbs to taste.
- Serve: Ladle the hot soup into bowls and serve with crusty bread or a side salad.
