Homemade Croissant Rolls Recipe

Ingredients:

  • 3 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1 cup warm milk
  • 2 large eggs
  • 1 cup unsalted butter, cold and cut into small cubes
  • 1 egg (for egg wash)
  • 2 tablespoons water (for egg wash)

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour, sugar, yeast, and salt.
    • Add the warm milk and eggs to the dry ingredients, and mix until a dough forms.
    • Knead the dough on a lightly floured surface for about 5 minutes until smooth.
    • Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour or until it doubles in size.
  2. Incorporate the Butter:
    • On a lightly floured surface, roll the dough into a rectangle about 1/2 inch thick.
    • Place the cold butter cubes evenly over two-thirds of the dough.
    • Fold the dough into thirds, like folding a letter: fold the uncovered third over the middle, then fold the remaining third over that.
    • Turn the dough 90 degrees and roll it out again into a rectangle. Fold it into thirds again.
    • Repeat this rolling and folding process 2 more times, then wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Shape the Croissant Rolls:
    • Roll the chilled dough into a large rectangle about 1/4 inch thick.
    • Cut the dough into triangles for traditional croissants or into strips for croissant rolls.
    • For rolls, take each strip and roll it up from one end to the other, then place it seam-side down on a baking sheet lined with parchment paper.
  4. Second Rise:
    • Cover the shaped croissants with a clean kitchen towel and let them rise for about 1 hour or until they are puffy and doubled in size.
  5. Bake the Croissants:
    • Preheat the oven to 375°F (190°C).
    • In a small bowl, whisk together the egg and water to create an egg wash.
    • Brush the egg wash over the croissants.
    • Bake for 15 to 20 minutes or until golden brown and flaky.
  6. Cool and Serve:
    • Remove the croissants from the oven and let them cool on a wire rack.
    • Serve warm or at room temperature.
