Ingredients:
– 2 cups frozen pineapple chunks
– 1/4 cup milk (can replace almond, soy or coconut milk)
– 1/2 teaspoon lemon juice
– 1/2 teaspoon lime juice
– 2 tablespoons sugar (or to taste you can replace it with honey)
– pinch of salt
– 1 cup whipping cream (optional for a richer consistency)
Instructions:
1. Place the frozen pineapple pieces, milk, lemon juice, lime juice, sugar and salt in a blender. If you have little helpers in the kitchen, this is a fun step for them to take part in – they just love putting the pineapple chunks in the blender!
2. Blend ingredients at high speed until smooth and creamy. You’re looking for a smooth consistency, a texture that’s sure to bring back that vacation feeling.
3.If the mixture is too thick, you can add a little more milk. Just do it one tablespoon at a time to make sure you don’t lose the nice thickness – it’s all about getting a perfect whip!
4. Pour the mixture into a large piping bag fitted with a star nozzle. Twist the lid and gently press the Pineapple Whip into serving bowls or glasses in a twisting motion. If you don’t have a piping bag, a zipper bag with the corner cut off will do in a pinch!
5. For even more enjoyment, you can top each portion with a dollop of whipped cream if you like.
