  • ½ cup yellow cornmeal
  • 1½ teaspoons salt
  • 2 tablespoons olive oil

Toppings:

  • 9 ounces shredded mozzarella cheese
  • ⅓ cup diced pepperoni
  • ¼ pound spicy Italian sausage, browned, drained and crumbled
  • ⅛ cup chopped green bell pepper
  • ¼ cup chopped onion
  • ½ cup grated Parmesan cheese
  • ½ cup tomato sauce
  • 3 cloves garlic, sliced
  • 1 teaspoon dried oregano
  • 2 teaspoons white sugar

Step 1: Prepare the Yeast Mixture

  1. In a small bowl, dissolve 2 teaspoons sugar in 1 cup warm water.
  2. In another small bowl, mix 1 teaspoon active dry yeast with ½ cup flour and ½ cup warm water.
  3. Combine the yeast mixture with the sugar water mixture and let it rest for about 20 minutes until frothy.

Step 2: Mix the Dough

  1. In a medium bowl, combine 2½ cups of the remaining flour with cornmeal and salt.
  2. Remove half of this mixture and stir in the sugar water until well mixed.
  3. Add the second half of the flour/cornmeal mixture back into the bowl.
  4. Stir in the yeast mixture until combined.

Step 3: Knead the Dough

  1. On a lightly floured surface, knead the dough for 8–12 minutes until smooth and elastic.
  2. Place the dough in a lightly oiled bowl and cover with plastic wrap.
  3. Let the dough rise in a warm place until it doubles in volume.
