Honey Pineapple Grilled Chicken – A Tropical Grilled Delight!

Looking for something juicy, flavorful, and perfect for the grill? This Honey Pineapple Grilled Chicken is one of my go-to recipes for a sweet and savory meal that never fails to impress. The marinade is packed with tropical flavors, and the chicken turns out so tender and delicious—ideal for summer nights or anytime you fire up the grill!

 Ingredients:

  • 4 boneless, skinless chicken breasts

  • ½ cup pineapple juice

  • ¼ cup honey

  • 2 tablespoons soy sauce

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • 1 tablespoon fresh lime juice

  • 1 teaspoon ground ginger

  • Salt and pepper, to taste

  • Fresh cilantro (optional, for garnish)

 Here’s How I Make It:

1. Mix up the marinade:
In a bowl, I whisk together the pineapple juice, honey, soy sauce, olive oil, minced garlic, lime juice, ground ginger, plus a pinch of salt and pepper. It smells incredible already!

2. Marinate the chicken:
I place the chicken breasts in a zip-top bag and pour the marinade over them. After sealing the bag, I pop it in the fridge for at least 1 hour (or up to 4 hours if I have time to spare). The longer it sits, the better the flavor!

3. Preheat the grill:
Before grilling, I heat up the grill to medium-high and lightly oil the grates to keep the chicken from sticking.

4. Grill to perfection:
Once the chicken is out of the marinade (which I discard), I grill it for about 6–8 minutes on each side. I’m watching for beautiful grill marks and an internal temp of 165°F (75°C).

5. Serve and enjoy:
After a quick rest, the chicken is ready to serve. Sometimes I top it with a bit of chopped cilantro for a fresh finish. It’s amazing paired with grilled veggies or coconut rice!
