HONEY ROASTED CARROTS

Ingredients

  • 2 lbs. Carrots, peeled and cut into 2-inch pieces, see notes
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 3 tablespoons butter
  • 3 tablespoons honey
  • ⅛ teaspoon pepper Cayenne pepper
  • ½ tablespoon fresh thyme or fresh parsley

Preheat oven to 425 degrees.
In a large bowl, combine carrots and olive oil. Sprinkle with salt and pepper. Place them on a large baking sheet lined with parchment paper.Roast for 20 minutes until tender.
Melt butter in a large saucepan over medium-low heat. Add the honey and cayenne pepper and stir and cook for a few minutes. Add the roasted carrots to the pan and toss to combine. Sprinkle the carrots with fresh thyme.Season with more salt and pepper.

Notes

Peel the carrots for aesthetic reasons. They will appreciate you doing this.
Cut the carrots into wedges about 5 cm thick. Halve the thick ends.The little bit of cayenne pepper doesn’t make it hot or spicy, it adds a little more dimension to the flavor. Roast
carrots until soft.
Fresh thyme really enhances these carrots, but in a pinch you can substitute it with dried thyme leaves.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave at reduced power.
