  • 1/2 teaspoon black pepper
  • 1/4 cup water or vegetable broth
  • 1 tablespoon white vinegar
  • 1 teaspoon granulated sugar

Jamaican Steamed Cabbage

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until they become fragrant and translucent, about 2-3 minutes.
  2. Add the julienned carrots, bell pepper, and thyme to the pot. Stir and cook for another 3-4 minutes until the vegetables begin to soften.
  3. Add the sliced cabbage to the pot. Pour in the water or broth, and season with salt and black pepper. Stir well to combine all ingredients.
  4. Cover the pot and allow the cabbage to steam on medium-low heat for about 10 minutes, stirring occasionally. The cabbage should be tender but still slightly crisp.
  5. Once the cabbage is cooked to your liking, stir in the vinegar and sugar. Cook for an additional 1-2 minutes to allow the flavors to meld.
  6. Remove from heat, discard the thyme sprigs, and serve the cabbage warm as a side dish.
