This Keto Kielbasa Soup with Cauliflower is a rich, creamy, and satisfying dish that’s low in carbs but full of smoky sausage flavor. Perfect for cold nights or quick weekday dinners, this soup is keto-friendly, gluten-free, and incredibly easy to prepare. Ingredients

12 oz kielbasa sausage, sliced into half-moons

1 tablespoon olive oil or butter

1 small onion, chopped

2 cloves garlic, minced

1 medium head of cauliflower, chopped into florets

4 cups chicken broth (preferably low-sodium)

1/2 cup heavy cream

1/2 teaspoon smoked paprika

1/2 teaspoon dried thyme

Salt and pepper, to taste

Optional toppings: shredded cheese, chopped parsley, red pepper flakes
Instructions
Step 1: Sauté the Kielbasa
In a large pot or Dutch oven, heat olive oil over medium heat.
Add the sliced kielbasa and cook until browned (about 4–5 minutes). Remove and set aside.
Step 2: Sauté Aromatics
In the same pot, add the onion and cook until translucent.
Stir in garlic and cook for 30 seconds until fragrant.
Step 3: Add Cauliflower and Broth
Add the cauliflower florets, chicken broth, paprika, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 12–15 minutes, or until cauliflower is tender.
Step 4: Blend (Optional)
For a creamier texture, use an immersion blender to blend half the soup, or transfer half to a blender and blend until smooth—then return it to the pot.
Step 5: Add Cream and Kielbasa
Stir in the heavy cream and return the browned kielbasa to the pot.
Simmer for another 5 minutes to heat through.
