Instant Pot Kielbasa Cabbage Potato Soup

Introduction: This Instant Pot soup is a hearty and flavorful dish combining smoky kielbasa, tender cabbage, potatoes, and carrots. It’s an easy-to-make comfort food perfect for chilly days.

Ingredients:

  • 1 lb kielbasa, cut into 1-inch pieces
  • 1 small head green cabbage, chopped
  • 4 medium red potatoes, cubed
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 bay leaf
  • 1 tablespoon olive oil

Instructions:

  1. Turn on the Instant Pot to the “Sauté” setting. Add olive oil and brown the kielbasa. Remove and set aside.
  2. Sauté onions, garlic, carrots, and celery in the pot until softened.
  3. Add the broth, cabbage, potatoes, salt, pepper, thyme, and bay leaf. Stir well.
  4. Return the kielbasa to the pot and cancel the “Sauté” mode.
  5. Seal the lid and cook on high pressure for 4 minutes. Allow the pressure to release naturally for 15 minutes, then manually release the rest.
  6. Open the lid, stir, and adjust seasonings if needed. Serve with crusty bread.
