Layered Cookie Crumb Dessert Cups

Ingredients:

  • 2 cups Speculoos cookies (or any spiced cookie), crushed
  • 1/2 cup melted butter
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Extra Speculoos cookies for garnish

Instructions:

  1. Prepare the Cookie Crumb Base:
    • In a medium bowl, combine the crushed Speculoos cookies and melted butter.
    • Press the mixture into the bottom of dessert cups to form the base layer.
  2. Make the Creamy Filling:
    • In a separate bowl, whisk together the instant vanilla pudding mix and cold milk until it thickens.
    • Pour the pudding over the cookie crumb base in the dessert cups.
  3. Prepare the Whipped Cream Topping:
    • In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
    • Using a piping bag or a spoon, top the creamy filling with the whipped cream.
  4. Add Finishing Touches:
    • Sprinkle extra crushed Speculoos cookies over the whipped cream.
    • Garnish each cup with a whole Speculoos cookie.
  5. Chill and Serve:
    • Refrigerate the dessert cups for at least 2 hours to allow the layers to set.
    • Serve chilled and enjoy!
