Layered Cookie Crumb Dessert Cups

Ingredients:
- 2 cups Speculoos cookies (or any spiced cookie), crushed
- 1/2 cup melted butter
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 cups cold milk
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Extra Speculoos cookies for garnish
Instructions:
- Prepare the Cookie Crumb Base:
- In a medium bowl, combine the crushed Speculoos cookies and melted butter.
- Press the mixture into the bottom of dessert cups to form the base layer.
- Make the Creamy Filling:
- In a separate bowl, whisk together the instant vanilla pudding mix and cold milk until it thickens.
- Pour the pudding over the cookie crumb base in the dessert cups.
- Prepare the Whipped Cream Topping:
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Using a piping bag or a spoon, top the creamy filling with the whipped cream.
- Add Finishing Touches:
- Sprinkle extra crushed Speculoos cookies over the whipped cream.
- Garnish each cup with a whole Speculoos cookie.
- Chill and Serve:
- Refrigerate the dessert cups for at least 2 hours to allow the layers to set.
- Serve chilled and enjoy!
