Lime and Pistachio Cheesecake

Ingredients:

  • 200g digestive biscuits, crushed
  • 100g butter, melted
  • 300g cream cheese, softened
  • 100g granulated sugar
  • 200ml heavy cream
  • Juice and zest of 3 limes
  • 100g pistachios, finely chopped
  • 100g cherries, for topping
  • Lime slices, for garnish
  • Whipped cream, for garnish

Instructions:

  1. Prepare the base: Mix crushed biscuits with melted butter and press into the bottom of a springform pan. Chill in the refrigerator for at least 30 minutes.
  2. Make the filling: In a bowl, combine cream cheese, sugar, lime juice, and zest. Beat until smooth. In a separate bowl, whip the heavy cream to stiff peaks and fold into the cream cheese mixture. Stir in half of the chopped pistachios.
  3. Assemble the cheesecake: Pour the filling over the biscuit base and smooth the top. Refrigerate for at least 4 hours, or until set.
  4. Decorate: Before serving, top with whipped cream, remaining pistachios, cherries, and lime slices.
  5. Serve chilled: Enjoy this refreshing dessert after a lovely meal.
