Marry Me Chicken with Roasted Asparagus
Ingredients:
- For the Chicken:
- 6 Chicken Thighs
- Onion powder
- Garlic powder
- Cajun seasoning
- Pepper
- Paprika
- Italian herbs
- Olive oil
- For the Sauce:
- 2 tbsp Butter
- 2 Tbsp fresh minced Garlic
- 1/2 cup Chicken broth
- 1/3 cup Heavy whipping cream
- Sun-dried Tomatoes
- 1 Tbsp White cooking wine
- 1/2 cup Fresh Shredded Parmesan or Italian cheese
- Salt
- Pepper
- Italian herbs
- For the Mashed Potatoes:
- 2 lbs potatoes, peeled and cubed
- 1/2 cup milk
- 4 tbsp butter
- Salt and pepper to taste
- For the Roasted Asparagus:
- 1 bunch asparagus, trimmed
- 1-2 tbsp olive oil
- Salt and pepper to taste
- Lemon zest (optional)
Instructions:
- Prepare the Chicken:
- Season the chicken thighs with onion powder, garlic powder, Cajun seasoning, pepper, paprika, and Italian herbs.
- Heat olive oil in a skillet over medium-high heat. Pan-sear the chicken thighs on both sides until golden brown. Transfer to a separate pan.
- Make the Sauce:
- In the same skillet, add butter and minced garlic. Cook for about 3 minutes until fragrant.
- Add the chicken broth, sun-dried tomatoes, and heavy whipping cream. Stir well.
- Add the white cooking wine, salt, pepper, and Italian herbs, then let the sauce simmer.
- Stir in the shredded Parmesan or Italian cheese until the sauce is smooth and creamy.
- Pour the sauce over the chicken thighs in the pan.
- Bake the Chicken:
- Preheat your oven to 400°F (200°C).
- Bake the chicken with the sauce for 30-35 minutes until fully cooked and the sauce is bubbly.
- Prepare the Mashed Potatoes:
- Boil the cubed potatoes in salted water until tender, about 15-20 minutes.
- Drain and return the potatoes to the pot.
- Add milk, butter, salt, and pepper. Mash until smooth and creamy.
- Roast the Asparagus:
- Preheat the oven to 400°F (200°C) if not already on from the chicken.
- Place the asparagus on a baking sheet. Drizzle with olive oil, then season with salt and pepper.
- Roast for 10-15 minutes, until tender and slightly crispy. For added flavor, you can sprinkle with lemon zest before serving.
- Serve:
- Plate the mashed potatoes, place a chicken thigh on top, and spoon some of the sauce over everything.
- Serve with roasted asparagus on the side.
