Marry Me Chicken with Roasted Asparagus

Ingredients:

  • For the Chicken:
    • 6 Chicken Thighs
    • Onion powder
    • Garlic powder
    • Cajun seasoning
    • Pepper
    • Paprika
    • Italian herbs
    • Olive oil
  • For the Sauce:
    • 2 tbsp Butter
    • 2 Tbsp fresh minced Garlic
    • 1/2 cup Chicken broth
    • 1/3 cup Heavy whipping cream
    • Sun-dried Tomatoes
    • 1 Tbsp White cooking wine
    • 1/2 cup Fresh Shredded Parmesan or Italian cheese
    • Salt
    • Pepper
    • Italian herbs
  • For the Mashed Potatoes:
    • 2 lbs potatoes, peeled and cubed
    • 1/2 cup milk
    • 4 tbsp butter
    • Salt and pepper to taste
  • For the Roasted Asparagus:
    • 1 bunch asparagus, trimmed
    • 1-2 tbsp olive oil
    • Salt and pepper to taste
    • Lemon zest (optional)

Instructions:

  1. Prepare the Chicken:
    • Season the chicken thighs with onion powder, garlic powder, Cajun seasoning, pepper, paprika, and Italian herbs.
    • Heat olive oil in a skillet over medium-high heat. Pan-sear the chicken thighs on both sides until golden brown. Transfer to a separate pan.
  2. Make the Sauce:
    • In the same skillet, add butter and minced garlic. Cook for about 3 minutes until fragrant.
    • Add the chicken broth, sun-dried tomatoes, and heavy whipping cream. Stir well.
    • Add the white cooking wine, salt, pepper, and Italian herbs, then let the sauce simmer.
    • Stir in the shredded Parmesan or Italian cheese until the sauce is smooth and creamy.
    • Pour the sauce over the chicken thighs in the pan.
  3. Bake the Chicken:
    • Preheat your oven to 400°F (200°C).
    • Bake the chicken with the sauce for 30-35 minutes until fully cooked and the sauce is bubbly.
  4. Prepare the Mashed Potatoes:
    • Boil the cubed potatoes in salted water until tender, about 15-20 minutes.
    • Drain and return the potatoes to the pot.
    • Add milk, butter, salt, and pepper. Mash until smooth and creamy.
  5. Roast the Asparagus:
    • Preheat the oven to 400°F (200°C) if not already on from the chicken.
    • Place the asparagus on a baking sheet. Drizzle with olive oil, then season with salt and pepper.
    • Roast for 10-15 minutes, until tender and slightly crispy. For added flavor, you can sprinkle with lemon zest before serving.
  6. Serve:
    • Plate the mashed potatoes, place a chicken thigh on top, and spoon some of the sauce over everything.
    • Serve with roasted asparagus on the side.
