Mediterranean Pasta Salad

Ingredients:

  • 12 ounces penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach leaves
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup green olives, pitted and halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup roasted red peppers, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente.
    • Drain the pasta and rinse under cold water to cool it down. Set aside.
  2. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, basil, salt, and pepper. Adjust seasoning to taste.
  3. Assemble the Salad:
    • In a large salad bowl, combine the cooked pasta, cherry tomatoes, spinach, kalamata olives, green olives, red onion, roasted red peppers, and feta cheese.
  4. Dress the Salad:
    • Pour the dressing over the salad and toss gently to combine all the ingredients and evenly coat them with the dressing.
  5. Serve:
    • Let the salad sit for at least 15 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.

Tips:

  • Add Protein: For a heartier salad, add grilled chicken, shrimp, or chickpeas.
  • Herbs: Fresh herbs like parsley or basil can be added for extra flavor.
  • Vinegar: Substitute red wine vinegar with balsamic or lemon juice for a different taste.
