Mexican Corn Coleslaw

This will help you get through the summer. While we will always love traditional coleslaw, we can’t help but think that this one is so much better as it’s full of color and flavor. The cabbage and/or slaw mix is ​​still the base of this
recipe, but we’ve added a number of additions (corn, peppers, black beans, jalapeno, and lime juice) that make it special. . trust us. You’ll love it!

The best thing about this recipe, just like the classic version, is that it’s super refreshing and perfect for those days when you need a little pick-me-up in the form of a tasty side dish. The taco seasoning and jalapeño mix give the dish more vibrancy (without being too spicy), and the other ingredients we mentioned above give this dish more substance, making it filling and keeping you satisfied.After all, any dish that you can make in less than 10 minutes and feed a crowd is absolutely fine with us. INGREDIENTS

  • 1 (14 oz.) bag coleslaw mix
  • 1/2 red pepper, diced
  • 1/2 orange pepper, diced
  • 3/4 cup mayonnaise
  • 1/3 cup sour cream
  • 1 (13.75 oz.)) can black beans, rinsed and drained
  • 1 (13.75 ounce) can corn, rinsed and drained
  • 1/3 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1 jalapeño, seeded, chopped
  • 1 package taco seasoning

DIRECTIONS

In a medium bowl, stir together mayonnaise, sour cream, lime juice, and taco seasoning until well combined. Store in the refrigerator until ready to use.
Mix all other ingredients (coleslaw mix, peppers, black beans, corn, cilantro and jalapeno) in a large bowl.Toss with the taco seasoning mix until well coated, then top with more cilantro if desired. Enjoy!
