Mexican Spaghetti

Ingredients

  • 16 oz thin spaghetti pasta
  • 2 cups cooked chicken, chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 (10 oz) can of diced tomatoes and green chiles, undrained
  • 1 cup sour cream or Greek yogurt
  • 1 cup shredded cheddar or Mexican blend cheese

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Cook the Pasta:
    • Boil the spaghetti pasta according to package directions. Drain and set aside.
  3. Mix the Ingredients:
    • In a large bowl, mix together the chopped chicken, cream of mushroom soup, cream of chicken soup, diced tomatoes and green chiles (with their juice), and sour cream or Greek yogurt. Stir until evenly combined.
  4. Combine with Pasta:
    • Add the cooked and drained pasta to the mixture in the bowl. Stir until everything is evenly combined.
  5. Transfer to Baking Dish:
    • Transfer the mixture to a 9×13-inch baking dish. Spread it out evenly.
  6. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 30 minutes, or until the mixture is hot and bubbly.
  7. Add Cheese and Finish Baking:
    • Remove the foil and sprinkle the top with the shredded cheese.
    • Return the dish to the oven, uncovered, and bake until the cheese is melted and bubbly.
  8. Serve:
    • Serve the Mexican spaghetti hot, garnished with additional toppings like chopped cilantro or sliced green onions if desired.
