Moist Butter Cake
Ingredients:
- 1 cup (230g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 cup (200g) brown sugar
- 4 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 1 cup (240ml) buttermilk
- 2 and 1/2 cups (315g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Cream the Butter and Sugars:
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 3-5 minutes.
- Add Eggs and Vanilla:
- Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
- Mix Dry Ingredients:
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.
- Pour into Pan:
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake:
- Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool:
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve:
- Slice and serve the cake as is, or with a dusting of powdered sugar or a drizzle of glaze for extra sweetness.
Tips:
- Add Zest: For a citrus twist, add the zest of one lemon or orange to the batter.
- Nuts or Fruits: Mix in chopped nuts or dried fruits for added texture.
- Glaze: Make a simple glaze with powdered sugar and milk for a sweet topping.
