Mushroom and Sausage Casserole
Ingredients
- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups potatoes, thinly sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 1/2 cups heavy cream
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Cook Sausage:
- In a large skillet, heat the olive oil over medium heat.
- Add the sausage and cook until browned, breaking it up into crumbles. Remove the sausage from the skillet and set aside.
- Cook Vegetables:
- In the same skillet, add the onion and garlic, and sauté until the onion is translucent.
- Add the mushrooms and cook until they are soft and any liquid has evaporated.
- Assemble Casserole:
- In a large mixing bowl, combine the cooked sausage, sautéed mushrooms, onions, sliced potatoes, thyme, oregano, salt, and pepper.
- Add half of the mozzarella cheese and mix well.
- Prepare Baking Dish:
- Lightly grease a baking dish and spread the sausage and vegetable mixture evenly in the dish.
- Add Cream and Cheese:
- Pour the heavy cream over the mixture in the baking dish.
- Sprinkle the remaining mozzarella cheese and Parmesan cheese over the top.
- Bake:
- Cover the baking dish with foil and bake in the preheated oven for 40 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.
- Garnish and Serve:
- Remove from the oven and let it cool for a few minutes.
- Garnish with fresh parsley and serve hot.
