Mushroom and Sausage Casserole

Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups potatoes, thinly sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Sausage:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the sausage and cook until browned, breaking it up into crumbles. Remove the sausage from the skillet and set aside.
  3. Cook Vegetables:
    • In the same skillet, add the onion and garlic, and sauté until the onion is translucent.
    • Add the mushrooms and cook until they are soft and any liquid has evaporated.
  4. Assemble Casserole:
    • In a large mixing bowl, combine the cooked sausage, sautéed mushrooms, onions, sliced potatoes, thyme, oregano, salt, and pepper.
    • Add half of the mozzarella cheese and mix well.
  5. Prepare Baking Dish:
    • Lightly grease a baking dish and spread the sausage and vegetable mixture evenly in the dish.
  6. Add Cream and Cheese:
    • Pour the heavy cream over the mixture in the baking dish.
    • Sprinkle the remaining mozzarella cheese and Parmesan cheese over the top.
  7. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 40 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.
  8. Garnish and Serve:
    • Remove from the oven and let it cool for a few minutes.
    • Garnish with fresh parsley and serve hot.
