Ingredients:
- Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- Topping:
- 1 can cherry pie filling (about 21 oz)
Instructions:
- Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9×13-inch baking dish. Place in the refrigerator to chill while preparing the filling.
- Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, and beat until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Assemble the Cheesecake: Spread the cheesecake filling evenly over the chilled graham cracker crust. Smooth the top with a spatula. Cover and refrigerate for at least 4 hours, or overnight for best results.
- Add the Cherry Topping: Once the cheesecake is set, spread the cherry pie filling evenly over the top of the cheesecake layer. Slice into squares and serve chilled.
