No-Bake Patriotic Cheesecake
Ingredients
For the Crust (Red Layer):

2 cups crushed graham crackers or red velvet cookie crumbs

1/2 cup melted unsalted butter

Red food coloring (gel or liquid, optional)
For the Cheesecake Filling (White Layer):

16 oz cream cheese, softened

2 cups powdered sugar
-
2 tsp vanilla extract
-
2 cups heavy whipping cream (cold)
For the Topping (Blue Layer):

1 package (3 oz) blue raspberry gelatin
-
1 cup boiling water
-
1/2 cup cold water
Garnish:

Fresh strawberries (halved)

Fresh blueberries
-
Whipped cream (optional)
Instructions

Prepare the crust:
Mix the crushed graham crackers or cookies with melted butter and red food coloring. Press into the bottom of a 9×9-inch baking dish. Chill in the fridge for 15–20 minutes. -
Make the cheesecake filling:
In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing well. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture. -
Spread the cheesecake filling over the chilled crust and smooth out the top. Return to the fridge for at least 1 hour.

Prepare the blue gelatin topping:
Dissolve the gelatin in boiling water, then stir in cold water. Let it cool slightly, then gently pour over the cheesecake layer. Chill for 3–4 hours, or until set. -
Decorate before serving with halved strawberries, blueberries, and whipped cream swirls for a festive finish!
