No-Bake Patriotic Cheesecake

Ingredients

For the Crust (Red Layer):

  • 2 cups crushed graham crackers or red velvet cookie crumbs

  • 1/2 cup melted unsalted butter

  • Red food coloring (gel or liquid, optional)

For the Cheesecake Filling (White Layer):

  • 16 oz cream cheese, softened

  • 2 cups powdered sugar

  • 2 tsp vanilla extract

  • 2 cups heavy whipping cream (cold)

For the Topping (Blue Layer):

  • 1 package (3 oz) blue raspberry gelatin

  • 1 cup boiling water

  • 1/2 cup cold water

Garnish:

  • Fresh strawberries (halved)

  • Fresh blueberries

  • Whipped cream (optional)


‍ Instructions

  1. Prepare the crust:
    Mix the crushed graham crackers or cookies with melted butter and red food coloring. Press into the bottom of a 9×9-inch baking dish. Chill in the fridge for 15–20 minutes.

  2. Make the cheesecake filling:
    In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing well. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.

  3. Spread the cheesecake filling over the chilled crust and smooth out the top. Return to the fridge for at least 1 hour.

  4. Prepare the blue gelatin topping:
    Dissolve the gelatin in boiling water, then stir in cold water. Let it cool slightly, then gently pour over the cheesecake layer. Chill for 3–4 hours, or until set.

  5. Decorate before serving with halved strawberries, blueberries, and whipped cream swirls for a festive finish!

  • Use gel-based food coloring for more vibrant red without thinning your crust.

  • Make this dessert a day ahead for best texture and flavor.

  • Substitute the gelatin topping with blue-colored whipped cream or frosting if preferred.
