Ingredients

  • 2 tbsp olive oil
  • 1 lb chicken breast, diced into bite-sized pieces
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp ketchup
  • 1 tbsp rice vinegar (or white vinegar)
  • 1/2 cup chicken broth (or water)
  • 1 tsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • 8 oz noodles of your choice (spaghetti, ramen, or stir-fry noodles work well)
  • Salt and pepper, to taste
  • Chopped green onions (for garnish, optional)

Instructions

Step 1: Prepare the Ingredients

Start by dicing the chicken breast into small pieces and mincing the garlic. Measure out the honey, soy sauce, ketchup, and other ingredients to make cooking quick and efficient.

Step 2: Cook the Chicken

  1. Heat 2 tablespoons of olive oil in a large skillet or pan over medium heat.
  2. Season the diced chicken breast with salt and pepper, then add it to the pan. Cook for 5–7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  3. Remove the cooked chicken from the pan and set it aside.

Step 3: Make the Sauce

  1. In the same pan, add the minced garlic and sauté for about 1 minute until fragrant.
  2. Lower the heat to medium-low, then add soy sauce, honey, ketchup, rice vinegar, and chicken broth. Stir everything together to combine.

Step 4: Thicken the Sauce (Optional)

If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 2 tablespoons of water to make a slurry. Slowly add the slurry to the sauce, stirring constantly until it thickens.

Step 5: Cook the Noodles

  1. Add the uncooked noodles directly into the pan with the sauce.
  2. Stir to coat the noodles, then cover the pan and let them cook according to the package instructions (usually 5–7 minutes). You may need to add a little extra water or broth if the noodles absorb too much liquid.

Step 6: Combine and Serve

  1. Once the noodles are cooked and the sauce has thickened, return the cooked chicken to the pan.
  2. Toss everything together until the chicken is evenly coated with the sauce and mixed with the noodles.
  3. Garnish with chopped green onions, if desired, and serve hot!

Tips for Success

  • Use fresh garlic for the best flavor, but garlic powder can be substituted in a pinch.
  • Adjust the sweetness and saltiness of the sauce by adding more or less honey and soy sauce to your taste.
  • If you want to make this dish spicier, add a dash of chili flakes or sriracha to the sauce.

This One-Pot Honey Garlic Chicken & Noodles dish is sure to become a family favorite! It’s quick, flavorful, and satisfying—perfect for busy nights or whenever you crave comfort food. Enjoy!
