Pan-Seared Steak with Herb Butter

Ingredients:

  • 2 thick-cut steaks (such as ribeye, filet mignon, or sirloin)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice (optional)

Instructions:

  1. Prepare the Steaks:
    • Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.
    • Let the steaks sit at room temperature for about 30 minutes before cooking.
  2. Make the Herb Butter:
    • In a small bowl, mix together the butter, garlic, rosemary, thyme, and parsley. Set aside.
  3. Heat the Pan:
    • Heat the olive oil in a large cast-iron skillet or heavy pan over high heat until just beginning to smoke.
  4. Sear the Steaks:
    • Add the steaks to the pan and sear for about 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness.
    • During the last minute of cooking, add the herb butter to the pan and spoon it over the steaks as they finish cooking. You can also add a splash of lemon juice at this stage for a hint of acidity.
  5. Rest the Steaks:
    • Remove the steaks from the pan and let them rest on a cutting board for about 5 minutes to allow the juices to redistribute.
  6. Serve:
    • Slice the steaks against the grain and serve with the melted herb butter drizzled over the top.
  7. Enjoy.
