Ingredients

1 lb boneless, skinless chicken breast

2 cups elbow macaroni (uncooked)

2 tablespoons butter

3 cloves garlic, minced

2 tablespoons all-purpose flour

2 cups milk

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

Instructions

Cook the Pasta
Boil macaroni in salted water until al dente. Drain and set aside. -
Cook the Chicken
Season chicken breast with salt and pepper. In a skillet over medium heat, cook until golden and fully done (internal temp: 165°F/74°C). Dice into bite-sized pieces and set aside. -
Make the Garlic Parmesan Sauce
In a large pot, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant. Stir in flour and whisk for 1–2 minutes to make a roux. -
Add Milk and Cheese
Slowly add milk while whisking to prevent lumps. Bring to a gentle simmer and let it thicken. Stir in mozzarella and Parmesan cheese until melted and smooth. -
Combine Everything
Add the cooked macaroni and diced chicken into the sauce. Stir well to combine. Cook for 2–3 more minutes until heated through. -
Serve and Garnish
Transfer to a serving dish, sprinkle with fresh parsley, and serve hot.
