This Parmesan Garlic Chicken Mac and Cheese is the ultimate comfort food. It’s rich, flavorful, and perfect for cozy dinners or crowd-pleasing meals. Made with tender chicken breast and a creamy cheese sauce, it’s a twist on classic mac and cheese you’ll want to make again and again.

Ingredients

  • 1 lb boneless, skinless chicken breast

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 cups elbow macaroni (uncooked)

  • 2 tablespoons butter

  • 3 cloves garlic, minced

  • 2 tablespoons all-purpose flour

  • 2 cups milk

  • 1 cup shredded mozzarella cheese

  • 1 cup grated Parmesan cheese

  • Optional: chopped parsley for garnish

Instructions

  1. Cook the Pasta
    Boil macaroni in salted water until al dente. Drain and set aside.

  2. Cook the Chicken
    Season chicken breast with salt and pepper. In a skillet over medium heat, cook until golden and fully done (internal temp: 165°F/74°C). Dice into bite-sized pieces and set aside.

  3. Make the Garlic Parmesan Sauce
    In a large pot, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant. Stir in flour and whisk for 1–2 minutes to make a roux.

  4. Add Milk and Cheese
    Slowly add milk while whisking to prevent lumps. Bring to a gentle simmer and let it thicken. Stir in mozzarella and Parmesan cheese until melted and smooth.

  5. Combine Everything
    Add the cooked macaroni and diced chicken into the sauce. Stir well to combine. Cook for 2–3 more minutes until heated through.

  6. Serve and Garnish
    Transfer to a serving dish, sprinkle with fresh parsley, and serve hot.

  • Use freshly grated Parmesan for the best texture and flavor.

  • Add a pinch of red pepper flakes for a little heat.
