Ingredients:

– 1 cup unsalted butter, softened
– 1 cup brown sugar, packed
– 1/2 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 1/2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup chopped and toasted pecans

Instructions:

1.Preheat the oven to 175°C (350°F) and line the baking sheets with baking paper.
2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
3. Stir in the eggs one at a time, followed by the vanilla extract. Make sure that the ingredients are well mixed.4. In a separate bowl, mix together the flour, baking powder and salt.
5. Gradually add the dry ingredients to the wet mixture and stir until well combined.
6.Gently fold in the chopped roasted walnuts.
7. Place heaping tablespoons of dough onto the prepared baking sheets, making sure there is enough space between each cookie.
8. Bake in the preheated oven for 10-12 minutes, or until the cookies are golden brown around the edges but still soft in the middle.9. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
