Ingredients

For the Cookie Dough

  • 2 cups all-purpose flour

  • 1 teaspoon cornstarch

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • ½ cup unsalted butter, cubed

  • ½ cup dark brown sugar, packed

  • ⅓ cup granulated sugar

  • 1 large egg, room temperature

  • 1 egg yolk, room temperature

  • 1 teaspoon vanilla extract

For the Pecan Filling

  • 6 tablespoons unsalted butter

  • ⅓ cup dark brown sugar

  • ⅓ cup pure maple syrup

  • 2 cups chopped pecans

  • ⅓ cup heavy cream

  • ½ teaspoon cinnamon

  • ¼ teaspoon ground cloves

  • ¼ teaspoon ground nutmeg

  • ⅛ teaspoon salt

  • Flaky sea salt, for topping

Instructions

1. Combine the Dry Ingredients

In a medium bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt. Set aside.

2. Prepare the Cookie Dough

In a large bowl, cream the butter with the brown sugar and granulated sugar until light and fluffy. Mix in the egg, egg yolk, and vanilla extract until smooth. Gradually add the dry ingredients, mixing just until combined.

3. Form the Cookies

Scoop the dough into balls and place them on a lined baking sheet. Use the back of a spoon or your thumb to create a small indentation in the center of each cookie. Chill the dough for 30 minutes.

4. Make the Pecan Filling

In a saucepan over medium heat, melt the butter with the brown sugar and maple syrup. Stir in the chopped pecans, then add the heavy cream, cinnamon, cloves, nutmeg, and salt. Remove from heat and let the mixture cool slightly.

5. Fill and Bake

Preheat the oven to 350°F (175°C). Spoon the pecan filling into the centers of the chilled cookie dough. Bake for 10–12 minutes, or until the edges are set and lightly golden.

6. Cool and Finish

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Sprinkle with flaky sea salt before serving.

Conclusion

These Pecan Pie Cookies are the perfect blend of soft cookie and classic pie filling, offering rich flavor in every bite. Easy to make yet impressive to serve, they’re ideal for holiday dessert trays, gift boxes, or a cozy treat with a cup of coffee. One batch is never enough—these cookies disappear fast!
