Instructions:

  1. Prepare the Bones and Aromatics:
    • Parboil the beef bones by boiling them in a pot of water for 5-10 minutes. Discard the water, rinse the bones, and set aside.
    • Char the onion and ginger halves by grilling or broiling until they are lightly blackened. This step adds depth to the broth.
  2. Make the Broth:
    • In a large pot, add the cleaned bones, charred onion, ginger, star anise, cloves, cinnamon stick, and coriander seeds. Pour in 8 cups of water and bring to a boil.

    • Add fresh herbs, jalapeño slices, and green onions as toppings. Serve with lime wedges and bean sprouts on the side.
